Mushroom Kebabs

Ingredients

For the Kebabs:

  • 1/2 kg potatoes
  • 25 gm mushrooms
  • 25 gm paneer
  • 1 Tbsp onion, chopped
  • 1 Tbsp green onion, chopped
  • 1 tsp green coriander, chopped
  • 1 tsp green chili, chopped
  • 3 pieces star anise
  • 1 tsp onion seeds (kalonjee)
  • 2 tsp cumin seeds
  • Juice of 1 lemon
  • 1 tsp turmeric powder
  • Salt to taste

For Batter:

  • 250 gm gram flour (besan)
  • 1 tsp red chilli powder
  • 1 tsp cumin seeds, crushed
  • 1/2 tsp carom seeds (ajwain)

Recipe

For the Kebabs:

  • Boil the potatoes and mash them.
  • Add in rest of the kebab ingredients and mix well.
  • Make kebabs of the desired shape and keep aside.
  • Add 1 cup water in gram flour and add in salt, cumin and carom seeds.
  • Dip the kebabs in batter and coat well.
  • Heat oil in a pan and deep fry the kebabs on low heat till they turn golden.
  • Serve with ketchup.

Mushroom Pizza

Ingredients

  • 4 Portobello mushrooms
  • 3 tablespoons olive oil
  • 8 eggs
  • salt to taste
  • 1/4 teaspoon fresh ground black pepper
  • 1 tablespoon unsalted butter
  • 4 — 5 ounces bacon, cut into small cubes
  • 4 ounces finely grated cheese of your choice

Recipe

  • Preheat the oven to 425 degrees Fahrenheit.
  • Remove the stems of mushrooms and then use a spoon to gently scrape out the gills inside the mushroom.
  • Brush the mushrooms lightly with olive oil and place them in a baking dish cap sides up.
  • Roast the mushrooms for 15-20 minutes.
  • Fry the bacon in a large skillet over medium-high heat, stirring occasionally, until crispy.
  • Drain the bacon on paper towels and set aside.
  • Whisk the eggs, salt, and pepper in a mixing bowl just until the whites and yolks are blended.
  • Melt the butter in a heavy nonstick pan over medium heat.
  • Pour the egg mixture into the pan and turn the heat down to medium low.
  • Scramble the eggs as per your liking. Remove from heat.
  • Add the fried bacon into the just-scrambled eggs.
  • Take the mushrooms and spoon 1/4 of the scrambled eggs on top of each mushroom.
  • Top with grated cheese and serve.

Mushroom Rice

Ingredients

  • 1½ cup basmati rice
  • 200 g Button mushrooms, chopped
  • 1 medium size onion, finely chopped
  • 1 medium size tomato, chopped
  • 1 medium size potato, peeled & cubed
  • 1 tsp ginger garlic paste
  • ½ tsp cumin seeds
  • 2 green cardamoms
  • 3 cloves
  • 4 black peppercorns
  • 1 inch cinnamon
  • 1 cup thick coconut milk + 1.5 to 2 cups water or 2.5 to 3 cups water
  • 2 tbsp vegetable oil
  • salt

Recipe

  • Soak the rice for 20 to 30 mins.
  • Heat oil in a pressure cooker, heat oil. Add all the whole spices and fry for a few seconds.
  • Add the onions and fry them till translucent.
  • Add the ginger-garlic paste and saute a little.
  • Then add the chopped tomatoes, potatoes and mushrooms. Saute for 8-10 minutes till the mushrooms are half cooked.
  • Add the soaked rice.
  • Saute the rice on a low flame for 2 minutes.
  • Add the coconut milk+water or plain water. Stir and add salt.
  • Pressure cook for 2 to 3 whistles.
  • When the pressure settles down, take the rice out and fluff it a bit.
  • Serve after garnishing with cilantro.

Stuffed Mushroom

Ingredients

  • 250 gms large button mushrooms with stem
  • 2 Tbsp garlic, finely chopped
  • 2 Tbsp onion, finely chopped
  • 1/2 tsp white pepper powder
  • 2 Tbsp fresh coriander
  • 1/2 cup Cheddar cheese
  • 1 Tbsp butter
  • Salt to taste

Recipe

  • Wash the mushrooms and remove the stalks.
  • Core the cap.
  • Heat butter in a pan, add garlic and onion. Saute for a minute. Add salt and pepper.
  • Remove from heat.
  • Let the filling cool down and add grated cheese and chopped coriander.
  • Stuff the mixture in the mushroom caps and bake in at 220 degree Celsius for 4 minutes

Mushroom Manchurian

Ingredients

For the batter:

  • 1 cup all purpose flour
  • 3 tbsp cornflour
  • 1 tsp ginger garlic paste
  • ½ tsp black pepper powder
  • 1 tsp soya sauce
  • ¾ cup water
  • salt & sugar to taste

For the manchurian:

  • 200-250 gms button mushrooms
  • 3-4 spring onions, finely chopped
  • 2 tsp finely chopped garlic
  • 2 tsp finely chopped ginger
  • ½ tsp black pepper powder
  • 1 tbsp soy sauce
  • 1 medium size green or yellow bell pepper, chopped
  • salt to taste

Recipe

  • Halve the mushrooms.
  • Make the batter.
  • Heat oil in a pan. Dip the mushrooms in batter and fry them till they turn golden. Keep aside.
  • Add spring onion whites in a bowl and fry them for a minute.
  • Then add the ginger, garlic and some of the spring onion greens.
  • Fry again for a minute. Add salt, pepper and soy sauce.
  • Mix properly and add the mushrooms to this sauce.
  • Stir well and serve.
