5 Vegan Spinach Recipes For Kids

Spinach is a very nutritious food to serve, but it is not easy to serve spinach to kids. Gone are the days when kids used to get inspired by “Popeye – The Sailor Man” and start eating spinach to become healthy and fit.

And if you are a vegan, then it becomes an added concern to find a yummy spinach recipe. India is a place where almost non dish is complete without dairy products but this does not in any way mean that vegans will have no yummy spinach option.

Yes vegan recipes too are yummy; today I shall share some yummy vegan spinach recipes for your kid and the whole family. Read on.

Spinach Pasta With Tofu

 

Light Spinach Pasta With Tofu

Ingredients:

  • 2cups fresh spinach
  • 3ounces pasta (any shape)
  • 3ounces Firm Tofu (cubed)
  • 1large onion
  • 3garlic cloves, chopped
  • 1tablespoon oil
  • Red pepper powder
  • Salt

Method:

  • Boil pasta till it’s almost done not overly tender.
  • Wash and clean the spinach and steam with a little water for 4 minutes in the microwave.
  • Once it is steamed, blend it in a blender with the same water to get a spinach paste which is kind of runny.
  • In a large non stick pan, heat oil.
  • When oil gets hot, add the chopped garlic.
  • When the garlic is slightly browned add the onions and stir fry till the onions turn brown.
  • Add the tofu and stir fry till the tofu changes color and looks slightly golden.
  • Now add the red pepper flakes/powder and stir. Immediately add the spinach paste
  • Let it simmer.
  • Add salt.

Vegan Potato & Spinach Balls

 

Vegan Potato & Spinach Balls

Ingredients:

  • 3 big Potatoes or Sweet Potatoes (If using sweet potato then ass 1 tbsp oil and 2 tbsp of flour too)
  • 2 or 3 cups of Spinach fresh or frozen (or any other leafy green)
  • 3 cloves of Garlic
  • 1 tbsp Basil
  • 2 tbsp Chives
  • 2 tbsp Parsley
  • 1/2 tsp Cumin
  • 3 tbsp water
  • 2 tbsp Nutritional Yeast (optional)

Method:

  • Chop the potatoes in big chunks and boil until done; this will take around six minutes, do not over boil. Add some salt to the water if you desire.
  • Chop the Spinach and cook it in a pan with the chopped garlic and water for 3 – 4 minutes or until they wilt and are soft.
  • Chop the basil, chives and parsley. If fresh herbs are not available then you can use dried herbs too.
  • Mix everything in a bowl including yeast and let it rest until it cools down.
  • Now after the mixture has cooled down start with making small balls.
  • Take a baking dish, grease it, place balls in the baking dish. You can brush balls slightly with oil for more crispiness.
  • Bake in a preheated oven for 15 – 20 minutes at 450 degrees.

Spinach And Chickpea Curry

 

Spinach & Chickpea Curry

Ingredients:

  • 2 fresh tomatoes quartered
  • 1⁄2 inch cube fresh ginger cut in half
  • 1fresh green chili (optional)
  • 3 tbsps cooking oil
  • 1⁄4 tsp asafoetida powder (optional)
  • 1 tsp whole cumin seed
  • 3 cups fresh spinach chopped
  • 1(14 ounce) can chickpeas
  • 1⁄4 to 1⁄2 cup water
  • 1 tbsp ground coriander
  • 1⁄2 tsp ground chili powder
  • 1⁄2 tsp turmeric
  • Salt to taste
  • 1⁄2 tsp garam masala
  • fresh cilantro chopped finely

Method:

  • Blend together the tomatoes, the ginger and the fresh chili. Puree until completely smooth the set aside.
  • In a medium sized pan heat oil over medium heat. Once the oil is hot add in the asafoetida followed by the whole cumin seeds. After the cumin seeds splutter add in the tomato mixture. Stir to mix well. Let it sauté for few minutes.
  • Now add coriander, chili powder, turmeric and salt. Stir well to mix together and let it cook over medium low heat for about 10 minutes.
  • Add in fresh chopped spinach, followed by about 1/4 cup of water. Add up to 1/2 cup of water to reach desired consistency. Let it cook for another few minutes and then add boiled chickpeas. You can try mashing some of the chickpeas with the back of a spoon if you like, it makes the gravy thicker.
  • Now add garam masala and simmer for a few more minutes before serving.
  • Garnish with fresh chopped cilantro if you like and serve.

Avocado & Spinach Salad with Pine Nuts

 

Avocado & Spinach Salad with Pine Nuts

Ingredients:

  • 1 bundle spinach, washed and dried
  • 1 avocado, sliced
  • ¼ cup pine nuts, toasted
  • 3 tbsp olive oil
  • 1 tbsp fresh lemon juice
  • salt & pepper

Method:

  • If pine nuts aren’t toasted, heat them gently in a frying pan but watch them carefully so that they do not burn.
  • Whisk together olive oil, lemon juice, salt and pepper.
  • Toss everything into a bowl and enjoy.

Baked Tofu And Spinach

Ingredients:

  • 10 ounce chopped spinach
  • 10 ounce tofu
  • 1 small onion, minced
  • 3 tbsps nutritional yeast
  • 1 tbsp soy sauce

Method:

  • Preheat oven to 450 degrees, in the mean while steam spinach till it wilts.
  • Now blend spinach along with other ingredients in a blender.
  • Pour mixture into a nonstick baking dish.
  • Bake for 50 minutes. Keep an eye after 40 minutes, as it may get ready even sooner.
  • Allow it to cool, and serve.
