Tastiest Upma Recipe Ever Tried

For all those busy ladies who are always on the run, cooking can be quite a hectic chore. So today I am going to share with you a recipe which is quick, healthy, and of course delicious. The dish is called Upma. I came across it in a food group and since it was getting so much of love, thought I’d try it out myself. And yes! It did indeed turn out to be yummy.

Ingredients-

  • Sooji ( 2 and ½ cups)
  • Urad dal(1 and ½  tbsp. Soak it for 20 mins before you start)
  • Ghee/ Oil (3-4tbsp)
  • Rai (1 and ½ tsp)
  • Diced onions (one, big)
  • Chillies (Don’t use them if you are cooking for children)
  • Asafoetida/ hing (1 and ½ tsp but again don’t use it if you are making it for children)
  • Curry leaves (5-6)
  • Salt ( to taste)
  • Sugar (5-6tsp optional)
  • Water/ Curd/ Buttermilk( 4-5 cups)
  • Dhania/ coriander leaves (for garnish)

Method of Preparation-

  • First, dry roast the sooji, it helps to enhance the flavor of the dish. Or you can also roast it using a bit of oil/ghee. Just make sure you keep stirring it continuously on medium heat till turn light pink.
  • Now empty the pan when you are done, wipe it dry and pour in 3-4 tbsp of ghee. You can use half oil and half ghee as well. Add the rai and asafoetida to this hot oil.
  • Once it starts crackling add the asafoetida/ hing.
  • To this add the soaked urad dal. Drain it well before before adding it. Put it through a strainer and dry it using a kitchen towel. And stir. Sauté it on medium heat till it turns golden brown. Do not turn up the flame. It might cause the dal to burn.
  • When it’s done, now add the diced onions and stir. Sauté it till the onion turns soft and pink.
  • Add a few curry leaves to this. Rest leave it for garnishing.
  • Once the onion is done, add in the roasted sooji. And stir.
  • Depending on your taste you can add the chillies at this state, but don’t chop them up too finely unless you want it really spicy. Avoid the chillies completely if you are cooking it for your baby.
  • Add salt to taste. You can also add the sugar to this if you want to. But it’s completely alright if you wish to give it a miss or may be reduce the amount.
  • Stir all the ingredients well. Make sure you are stirring from the edges to, so that the sooji doesn’t stick there.
  • Now add the water/ buttermilk to this. Keep stirring to avoid lumps. Depending on the quality of the sooji you might have to add more water/ buttermilk. Let the liquid to get absorbed and cook it till the sooji turns soft. Cook at a low flame to prevent your sooji from getting burned.
  • When the sooji turns soft an starts separating, your dish is ready.
  • Serve it hot, garnished with chopped dhania, curry leaves and slit chillies and pickle too if you like it.
