Cheesy Risotto

  • 3 tbsp Butter or Olive Oil
  • 1/2 cup finely chopped Onions
  • 1 tsp finely chopped Garlic
  • 2 tbsp finely chopped Carrots
  • 2 tbsp finely chopped Zucchini
  • 1/4 cup boiled green Peas
  • 2 tbsp finely chopped French Beans
  • 2 cups cooked Rice
  • 2 tbsp Fresh Cream
  • 1/2 cup Milk
  • 1/4 cup grated processed Cheese
  • Salt to taste
  • Freshly ground black pepper powder to taste


  1. Heat butter/olive oil in a deep pan, now add onions and sauté them till they turn translucent.
  2. Add in garlic and sauté for a few more seconds.
  3. Now add all the vegetables and salt and mix well and cook for 4 to 5 minutes.
  4. When the vegetables are softened a little, add rice, cream, milk, ½ cup of water and salt if required and mix well.
  5. Bring to boil and simmer for a few minutes. Check the consistency and add more water if required.
  6. Add cheese and pepper, mix well.
  7. Serve

Blueberry & Vanilla Pancake

  • 1 1/2 cups milk
  • 1 egg
  • 2 teaspoons vanilla extract
  • 2 cups White Wings self- rising flour
  • 1/4 teaspoon bicarbonate of soda
  • 1/3 cup caster sugar
  • 25g butter, melted
  • 1 teaspoon vanilla extract, extra
  • 1 1/2 cups fresh or frozen blueberries


  1. Whisk milk, egg and vanilla together in a jug.
  2. Sift flour and bicarbonate of soda into another bowl. Stir in sugar.
  3. Make a well in centre. Add milk mixture. Whisk until just combined.
  4. Stir in extra vanilla extract and blueberries.
  5. Heat a large non-stick frying pan over medium heat. Brush pan with butter.
  6. Using 1/4 cup mixture per pancake, cook 2 pancakes for 3 to 4 minutes or until bubbles appear on surface. Turn and cook for 3 minutes or until cooked through.
  7. Transfer to a plate. Cover loosely with foil to keep warm.
  8. Serve.

Moong Sprouts Dosa

For The Dosas

  • 1 cup sprouted Moong
  • 4 tbsp Rice flour
  • Salt to taste

For The Stuffing

  • 1 tsp Oil
  • 1/4 tsp Mustard Seeds
  • 2 Curry Leaves
  • a pinch of Turmeric Powder
  • a pinch of asafoetida
  • 1/4 cup boiled , peeled and mashed Potatoes
  • 2 tbsp grated Carrot
  • 1/4 cup finely chopped Tomatoes
  • 2 tbsp grated Beetroot
  • 2 tbsp grated Cabbage
  • 2 tbsp finely chopped Onions
  • 1 tbsp grated fresh Coconut
  • 1 tbsp chopped Coriander
  • 1/2 tsp Chaat Masala
  • Salt to taste
  • 1/4 tsp oil for greasing and cooking


  1. Combine all the ingredients for dosa along with ¾ cup of water and blend in a mixer to a smooth paste. Keep aside to ferment for 15 minutes.
  2. Now prepare the stuffing, heat the oil in a non stick pan add mustard seeds, curry leaves & turmeric powder. When the mustard seeds splutter add asafoetida and all the other ingredients for stuffing, mix well and cook for two minutes.
  3. Turn off the stove and divide the stuffing into four equal portions.
  4. Now heat a non-stick griddle and grease it with ¼ tsp of oil.
  5. Pour a ladleful of batter and spread it in circular motion to form a thin circle.
  6. Cook on medium flame until it turns light brown.
  7. Spread a portion of stuffing evenly over dosa and fold it over.
  8. Serve with sauce or chutney.

Cheesy Spinach Squares

  • 2 tbsp unsalted butter, melted
  • 3 large eggs
  • 1 cup (8 fl oz/250 ml) whole milk
  • 1 cup (5 oz/155 g) all-purpose flour
  • 1 tsp baking powder
  • 1 tsp kosher salt
  • 1 lb (500 g) Cheddar cheese, shredded
  • 1 lb (500 g) chopped frozen spinach, thawed and drained
  • 1/4 cup (1 oz/30 g) grated Parmesan cheese


  1. Preheat oven to 375°F (190°C).
  2. Line a 9-by-13-inch (23-by-33-cm) rimmed baking sheet or baking dish with parchment paper and pour the melted butter into the prepared pan and spread to coat evenly.
  3. In a large bowl, beat the eggs until well blended. Whisk in the milk, flour, baking powder and salt. Add the Cheddar and spinach and stir until combined.
  4. Pour the spinach mixture into the prepared pan and spread in an even layer.
  5. Sprinkle the Parmesan cheese evenly over the top.
  6. Bake until the top is lightly browned and the juices are bubbling, this will take around 20-30 minutes.
  7. Transfer to a wire rack and let cool until just warm to the touch.
  8. Cut into 2-inch (5-cm) squares and serve.

Soya & Vegetable Pulao

  • 1/4 cup Soya Granules
  • 1/4 cup Rice (washed and drained)
  • Finely chopped Carrot
  • 1/4 cup Green Peas
  • 1 tsp Ghee
  • 1/2 tsp Cumin Seeds
  • 1 small stick of Cinnamon
  • 1 Cardamom
  • A pinch of Asafoetida
  • 1/4 cup Chopped onions
  • 1/4 tsp Turmeric powder
  • 1 tsp Coriander-Cumin Seeds Powder
  • Salt to taste


  1. Cook soya granules in 3/4th cup of water on a medium flame for 1 to 2 minutes or till they are soft. Stir occasionally.
  2. Heat the ghee in a pressure cooker and splutter cumin seeds. Now add cinnamon, cardamom, asafoetida and onions and sauté on a medium flame for 1 minute.
  3. Now add carrots, peas, rice, cooked soya granules, turmeric powder, coriander-cumin seeds powder, salt and 1 cup of water, mix well and pressure cook for 3 whistles.
  4. Serve with fresh curd or raita.
